Should I include this information in my resume, even though this internship will occur after the internship I'm applying for?

Keeping Things Straight A. It is OK to claim experiences that you have commitments for but have not yet experienced.
Think of how people list degrees that they are working toward but have not yet obtained. They usually state the date by which they expect to graduate.
Just be careful to get the dates right, and be clear.
